Acetic acid, also known as ethanoic acid, is an organic compound with the formula CH3COOH. It is easily recognizable as it gives vinegar its sour taste and pungent smell. Pure, anhydrous acetic acid is a colorless liquid that absorbs water from its surroundings, solidifies below 16.7 °C, and forms colorless crystals.
Food-grade acetic acid in 79% and 99% solutions is used in the production of foods, animal feed, cleaning products, and detergents. The 79% solution is available from autumn to spring due to its low freezing point. The 99% solution is only available from spring to autumn, as its freezing point is around 15 °C.
In households, the more concentrated version of vinegar is used for cleaning purposes as a descaler and mild disinfectant, while the more diluted form is used as a food flavoring agent and, when consumed, as a medicinal preparation.
